Hominy Corn Porridge
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves/Yields: 3
 

Ingredients
2 cups hominy corn, soaked overnight
5 cups water
1/2 cup flour
½ cup Coconut Milk
2 cinnamon sticks or Cinnamon Leaves
1/2 tsp. Grated nutmeg
4 ozs. (120 grams) granulated sugar

Method
1. Put the hominy corn in water and bring to a boil.
2. Lower the flame and allow to boil until the corn grains are tender, stirring occasionally.
3. Add flour and Coconut Milk, cinnamon powder and nutmeg.
4. Simmer until thickened.
5. Sweeten to taste.

Serving Suggestions: Serve with slices of ripe banana, brown sugar or nutmeg sprinkled on top.

Notes:
Hominy Corn cooks quicker if allowed to soak overnight.

Country Style Chocolate Tea
Preparation Time: 12 minutes

Ingredients
3/4 cup grated chocolate balls
3 Cinnamon Leaves
6 cups water
a pinch of salt
1/3 tsp Grated nutmeg
1/2 cup condensed milk


 

Method
1. Place grated chocolate balls and cinnamon leaves in a pot with the water.
2. Bring to a boil and simmer for about 10 minutes. Pout through a fine strainer.
3. Add salt, nutmeg and milk to taste. Serve hot

Jamaican Peanut Porridge
Preparation Time: 6 minutes

Ingredients
4 Tbsp Peanut Porridge Mix
2 Cinnamon Leaves
2 1/2 cups water
a pinch of salt
a pinch of Grated nutmeg
1/2 cup condensed milk
vanilla


 

Method
1. Add Peanut Porridge Mix to the water
2. Add vanilla, nutmeg and salt (optional)
3. Add cinnamon leaves, stir together for 4 to 5 minutes over medium heat stirring occasionally.
4. Sweeten to taste with either sugar and Soya OR condensed milk.
5. Serve hot. Makes 2 - 4 servings.


 

Culture Juice
Preparation Time: 5 minutes
Chill Time: 20 minutes
Serves/Yields: 6

Ingredients
2 ¼ cups Carrot Juice
2 ¼ cups water
½ cup stout
1/8 tsp. salt
a pinch of Grated nutmeg
½ cup condensed milk


 

Method
1. Combine all ingredients in a jug and sweeten to taste with condensed milk.
2. Sprinkle with nutmeg
3. Put to chill in the refrigerator.

Jamaican Screw-Driver
Preparation Time: 5 minutes


 

Ingredients
3 tbsps white rum
3/4 cup orange juice
cracked ice
lime to garnish


 

Method
1. Mix the rum and orange juice. Serve immediately in a tall glass over cracked ice.


 

Ackee and Saltfish
Preparation Time: 20 minutes

Ingredients
1 tin Ackee in Brine
½ lbs saltfish
1/8 tsp. salt
2 pieces of bacon or ham skin
1 small chopped onion
1 small chopped tomato
some chopped sweet pepper
chopped scotch bonnet pepper
cooking oil
a dash of black pepper


 

Method
1. Place saltfish in a pot with water and bring to a boil.
2. Simmer for about 5 minutes. Change water and simmer again for 5 minutes.
3. Drain and flake fish.
4. Heat the oil in a frying pan or dutch pot.
5. Add bacon\pork skin, stir.
6. Add onion, tomatoes, peppers. Saute for 2 or more minutes
7. Add saltfish, saute for a minute.
8. Add ackees. Sprinkle with black pepper. Serve hot.

Serving Suggestions:
Serve with sliced bread, or white rice, or boiled or fried dumplings or roast yam or roast breadfruit.


 

Jerk Chicken Breasts
Preparation Time: 15 minutes
Cooking/Baking Time: 45 minutes
Serves/Yields: 4


 

Ingredients
1 lb. (450 grams) boneless chicken breasts
2 ozs. (60 grams) onion, chopped
2 tsps. chopped garlic
1/8 tsp. salt
1 Tbsp. soya sauce
1 cup Jerk Barbecue Sauce
1/2 Tbsp. sherry

Method
1. Cut chicken into thick strips.
2. Season with onion, garlic, salt, soya sauce and 2 tablespoons Jerk Barbecue Sauce. Allow to marinate for 1 hour.
3. Shake off excess seasoning from chicken, place on a grill and allow to cook, turning the pieces frequently.
4. Add sherry to the remaining Jerk Barbecue Sauce and use to baste chicken while cooking.
5. Allow chicken to grill until tender.

Serving Suggestions:
Serve with additional sauce accompanied with baked potatoes and grilled tomato slices.

Jamaican Jerk Chicken
Preparation Time: 15 minutes
Cooking/Baking Time: 20 minutes


 

Ingredients
2 lbs. mixed chicken parts
1 tbsp cooking oil
1 pack Maggi Chicken Delights Jerk Mix
a dash of pimento (allspice)

Method
1. Rub oil and Maggi Chicken Delights Jerk Mix on chicken.
2. leave to marinate for 10 minutes.
3. Bake for 20 minutes at 500 degrees.
4. Add sherry to the remaining Jerk Barbecue Sauce and use to baste chicken while cooking.

Tips
Chicken can be pre-seasoned with fresh seasonings such as onion, escallion and thyme.

Escoveitch Fish
Preparation Time: 5 minutes
Cooking/Baking Time: 25 minutes
Serves/Yields: 6

Ingredients
6 slices snapper fish or 6 whole fish
1 ½ tsps. salt
1 tsp. black pepper
¼ cup vegetable oil for frying
1 jar Home Choice Escoveitch Pickle Sauce

Method
1. Rub fish with salt and black pepper.
2. Heat oil infrying pan and fry fish until very dry and crispy.
3. Drain and place in a deep dish.
4. Pour Escoveitch Sauce over fish.


 

Serving Suggestions:
Serve fish with Escoveitch Sauce and steamed rice/fried bammy/roasted breadfruit/festival.
